Makefile: force ln command to overwrite symlink (#4347)

When running `make install` twice ln shows an error:
```
ln -s -r /usr/local/bin/Hyprland /usr/local/bin/hyprland
ln: failed to create symbolic link '/usr/local/bin/hyprland': File exists
```
