Fix shebangs for NixOS users

There are a couple of places in the documentation where `/bin/bash`
are referenced (this doesn't exist on NixOS).  For compatibility, change
these to `/usr/bin/env bash`.  Leave `/bin/sh` intact as it isn't an
issue.
